Punjabi Garam Masala by harpal singh sokhi

It is always best to make masalas at home. 

I am a big fan of chef harpal singh and i have tried many of his recipes. 

I thought i should try out his garam masala , i am glad i did it. It is so flavourful !

1/2 cup coriander seeds , 1/4 cup jeera , 25 green cardamoms, 6 bay leaves, 15 cloves , 10 black cardamoms , 5 pieces of 2 inch cinnamon, 2 flowers of star anise , 6 units of mace , 1 tsp black pepper and 1 tbsp saunf( fennel seeds )

In a kadai, add everything and dry roast it for exactly 8 minutes in sim/low flame using a timer. 

Cool it and grind it well in a mixie . 

Then sieve it well and store it in a airtight container in the fridge.

This quantity yields approximately 100 grams of garam masala.
